I can’t get over how simple these are. Eggs provide high-quality protein along with important nutrients such as choline, vitamin B12, and selenium, while bananas provide fiber, potassium, vitamin B6, and natural sweetness. No flour or grains needed.
I am a huge pancake fan and typically have them once a weekend. They’re actually my husband’s “specialty.” I usually make them with healthy gluten-free ingredients, but I was excited to discover how delicious pancakes could be with just eggs and banana. They’re kid-approved, too.
Of course, I couldn’t resist superfooding them up EMBODY style! I add chia, flax, and hemp seeds for additional fiber, plant-based protein, healthy fats, and minerals.
