Here are the ingredients you’ll need to make Aloo Matar (Potato and Peas Curry):

Main Ingredients:

  • 2 medium potatoes (aloo) – peeled and diced
  • 1 cup green peas (matar) – fresh or frozen
  • 1 medium onion – finely chopped
  • 2 tomatoes – pureed or finely chopped
  • 2-3 garlic cloves – minced
  • 1-inch ginger – grated or minced
  • 1-2 green chilies – slit or chopped (adjust to taste)

Spices & Seasonings:

  • 1 tsp cumin seeds (jeera)
  • 1/2 tsp turmeric powder (haldi)
  • 1 tsp coriander powder (dhania powder)
  • 1/2 tsp red chili powder (adjust to taste)
  • 1 tsp garam masala
  • 1/2 tsp cumin powder (optional)
  • Salt – to taste
  • 1/2 tsp dry mango powder (amchur, optional for tanginess)

For Tempering & Cooking:

  • 2 tbsp oil or ghee
  • 1/2 tsp mustard seeds (optional)
  • A pinch of asafoetida (hing, optional)
  • Fresh coriander leaves (dhania) – for garnish
  • 1/2 cup water (as needed for gravy)

Optional Additions:

  • 1/2 tsp kasuri methi (dried fenugreek leaves)
  • 1/4 cup cream or coconut milk for richness
