A Comforting Classic for a Chilly Evening

Pot roast is a cozy, timeless meal, rooted in the simple tradition of turning an inexpensive, tough cut of beef into a tender and flavorful meal with slow cooking. Traditionally, the beef is first browned to build a rich, savory crust, then gently braised with carrots, onions, potatoes and aromatic herbs. As it cooks, the vegetables soak up the flavorful juices while the beef becomes soft, juicy and fork-tender.

This is a one-pot meal that feels both nostalgic and generous, meant for gathering around the table. The long, slow cooking process does most of the work, which makes pot roast well-suited to chilly, relaxed weekends, Sunday dinners, or any evening when you’re craving something hearty and comforting. Serve it with ladles of the rich pan gravy, along with mashed potatoes or crusty bread.

While not necessary, consider beginning the roast one day in advance of serving, if you have the time. After the meat has cooked, cool and refrigerate it overnight, still in the sauce, to allow any fat to rise to the top. The following day, discard the fat and proceed with cooking the vegetables and finishing the roast. Not only will this result in a cleaner sauce, but the roast will have time to develop in flavor.
