An Easy Seafood Dinner: White Fish Taco Night With Veggies and Salsa Verde



Taco night is a healthy staple in our house, especially during busy weeks. I often make tacos with chicken or grass-fed beef, but this fresh white fish version has become one of my favorite weeknight meals. It’s light, packed with clean protein, and comes together in less than 30 minutes. The best part? You can use just about any white fish you have on hand, including wild cod, halibut, and flounder.

I encourage my clients to build meals around high-quality protein and colorful vegetables to support blood sugar balance, energy, and overall health. White fish is an excellent source of lean protein that’s naturally rich in vitamins and minerals while remaining low in saturated fat. Garlic, onions, and peppers provide antioxidants that support heart health and immune function.

One of my favorite additions is cabbage. It adds fiber, which supports gut health, helps you feel fuller longer, and promotes healthy digestion. Fiber also plays an important role in supporting a healthy gut microbiome and maintaining steady blood sugar levels. Fresh cilantro contributes antioxidants and bright flavor, while salsa verde brings everything together with a fresh, tangy finish.

Time-saving tip: Ask your local fish market to remove the skin and cube the fish for you before you leave. It’s a simple step that saves valuable prep time at home and gets dinner on the table even faster.
