This nourishing fall dish celebrates some of my favorite seasonal ingredients and comes together in under 10 minutes.
Brussels sprouts are antioxidant-rich cruciferous vegetables packed with nutrients. Just one cup provides an impressive amount of vitamins C and K, along with folate, potassium, B vitamins, manganese, and fiber to support healthy digestion. Like other cruciferous vegetables, Brussels sprouts also contain beneficial plant compounds called glucosinolates that support cellular health.
Radishes bring even more crunch and nutrition. They’re a good source of vitamin C and also contain antioxidant plant compounds. Don’t overlook the radish greens, either—they’re edible and packed with nutrients, so toss them into salads or sauté them with other greens instead of throwing them away.
To save time, I buy organic Brussels sprouts already shaved. Adding chopped local apples gives this dish the perfect touch of natural sweetness, while sunflower seeds add crunch, healthy fats, plant-based protein, and vitamin E.
I kept the recipe completely dairy-free, but it’s also delicious with a small amount of blue cheese or your favorite cheese if you prefer.
Serve it as a seasonal side dish or add your favorite protein to make it a complete meal.
