This is a weekly tradition in our home and one of my favorite ways to create a delicious, nutrient-dense family dinner in just 20 minutes. It’s simple, satisfying, and packed with protein, iron, fiber, antioxidants, and vitamins.

When working with clients, I’m always encouraging them to amp up the nutritional value of their everyday meals. Taco night is the perfect opportunity! You don’t need to reinvent your favorite recipes. Just add more colorful vegetables, leafy greens, and quality protein.

I love using grass-fed beef, which provides complete protein, iron, zinc, and vitamin B12, essential nutrients for maintaining muscle, supporting energy metabolism, and overall health. Garlic, onions, and peppers add antioxidants and beneficial plant compounds, while spinach and microgreens provide folate, vitamins, and additional fiber.

My secret ingredient? Salsa verde! It adds incredible flavor and moisture without needing a taco seasoning packet. I also use frozen organic corn to save time and add natural sweetness.

Here’s another family-friendly tip: My daughter Gracie is vegetarian, so I prepare the same vegetable mixture in a separate cast-iron skillet and substitute black beans for the beef. They provide plant-based protein and fiber. One dinner, two delicious options, and everyone wins!

I love Siete brand taco shells, topped with extra microgreens, hot sauce, and cheese. I also make a pot of rice to round out the meal.

Get creative and toss in whatever vegetables you have in your refrigerator. Healthy eating should be easy, flexible, and delicious!
