Amritsari Paneer is a delicious and popular Punjabi dish where paneer (Indian cottage cheese) is marinated in a spiced gram flour (besan) batter and deep-fried until crispy. It’s inspired by the famous Amritsari Fish from Amritsar, Punjab, known for its rich flavors and crispy texture.

For the Marinade:

  • 200g paneer, cut into thick cubes or slices
  • 1/2 cup besan (gram flour)
  • 1 tbsp rice flour (for extra crispiness)
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp ajwain (carom seeds)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1 tbsp lemon juice
  • 1/2 cup water (adjust for thick batter)
  • Salt to taste
  • Oil for deep frying

For Garnishing:

  • Chaat masala
  • Lemon wedges
  • Fresh coriander leaves
  • Onion rings

Instructions:

  1. Prepare the Batter:
    • In a bowl, mix besan, rice flour, ginger-garlic paste, red chili powder, turmeric, ajwain, cumin, coriander powder, garam masala, lemon juice, and salt.
    • Gradually add water to make a smooth, thick batter (similar to pakora batter).
  2. Marinate the Paneer:
    • Coat the paneer pieces well in the batter and let them sit for 15-20 minutes.
  3. Deep Fry:
    • Heat oil in a deep pan on medium heat.
    • Gently slide the marinated paneer pieces into the hot oil.
    • Fry until golden brown and crispy (about 3-4 minutes per side).
    • Remove and drain on a paper towel.
  4. Serve Hot:
    • Sprinkle chaat masala and serve with green chutney, onion rings, and lemon wedges.
    • Enjoy as a snack or with paratha/naan.

Tips:

  • For extra flavor, add kasuri methi (dried fenugreek leaves) to the batter.
  • If you prefer a less spicy version, reduce the red chili powder.
  • For a healthier option, shallow fry or air-fry (brush with oil).
