Amritsari Paneer is a delicious and popular Punjabi dish where paneer (Indian cottage cheese) is marinated in a spiced gram flour (besan) batter and deep-fried until crispy. It’s inspired by the famous Amritsari Fish from Amritsar, Punjab, known for its rich flavors and crispy texture.
Amritsari Paneer Recipe
Ingredients:
For the Marinade:
- 200g paneer, cut into thick cubes or slices
- 1/2 cup besan (gram flour)
- 1 tbsp rice flour (for extra crispiness)
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp ajwain (carom seeds)
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1 tbsp lemon juice
- 1/2 cup water (adjust for thick batter)
- Salt to taste
- Oil for deep frying
For Garnishing:
- Chaat masala
- Lemon wedges
- Fresh coriander leaves
- Onion rings
Instructions:
- Prepare the Batter:
- In a bowl, mix besan, rice flour, ginger-garlic paste, red chili powder, turmeric, ajwain, cumin, coriander powder, garam masala, lemon juice, and salt.
- Gradually add water to make a smooth, thick batter (similar to pakora batter).
- Marinate the Paneer:
- Coat the paneer pieces well in the batter and let them sit for 15-20 minutes.
- Deep Fry:
- Heat oil in a deep pan on medium heat.
- Gently slide the marinated paneer pieces into the hot oil.
- Fry until golden brown and crispy (about 3-4 minutes per side).
- Remove and drain on a paper towel.
- Serve Hot:
- Sprinkle chaat masala and serve with green chutney, onion rings, and lemon wedges.
- Enjoy as a snack or with paratha/naan.
Tips:
- For extra flavor, add kasuri methi (dried fenugreek leaves) to the batter.
- If you prefer a less spicy version, reduce the red chili powder.
- For a healthier option, shallow fry or air-fry (brush with oil).
