Looking to lighten up your meals this summer? Citrus cod en papillote is one of my favorite healthy dinners because it’s fresh, colorful, packed with nutrients, and ready in under 30 minutes. Simply layer wild-caught white fish with vibrant vegetables, fresh herbs, citrus, and seasonings inside parchment paper, then let the oven do the work. The fish gently steams in its own juices, creating a tender, flavorful meal with almost no cleanup—no extra pots or pans required.

“En papillote” is French for “in parchment.” This classic cooking technique seals in moisture and allows the fish, vegetables, herbs, and citrus to infuse one another with flavor while preserving their natural nutrients. White fish such as cod, halibut, sea bass, or flounder is an excellent source of lean protein that supports muscle health, metabolism, and healthy blood sugar balance.

The beauty of this recipe is you can use whatever veggies you like to pair with the fish. We used kale and spinach, as they provide fiber and vitamins A, C, and K, while garlic and onions contain beneficial sulfur compounds that support heart and immune health.
